Focus on an iconic Alsatian crop : white asparagus

Overview of asparagus cultivation in Alsace
With some 500 hectares, Alsace, and the Bas-Rhin department in particular, ranks fifth in France for white asparagus production. It is a historic crop: it all began in Hoerdt in 1873 in a particularly sandy area that is ideal for growing white asparagus. Alsatian production quickly spread throughout the region, particularly around the major cities. Currently, around 100 Alsatian producers grow 2,400 tonnes of white asparagus annually. It occupies a prominent place in regional cuisine, with most of the production sold locally. To maintain momentum in the marketing of asparagus, a producers’ association was created in 1992. The Association des Producteurs d’Asperges d’Alsace (Alsace Asparagus Producers’ Association), whose aim is to promote asparagus collectively¹, currently brings together 45 independent producers and one cooperative, accounting for 80% of Alsace’s total production.
