France’s endiviers mobilize to recycle sails

Endive is a must-have vegetable, and the 3rd most widely consumed fresh vegetable in winter. It’s also a crop specific to the Hauts-de-France region. Let’s take a closer look at the different stages of cultivation, right up to the end of life of the protective sails.

Endive cultivation in France is based almost exclusively in the Hauts de France region, where the climate and soil texture are ideal for its development. 300 endiveries produce 120,000 tons each year on a surface area of around 7,000 ha. That’s 5 kg per household!

The vegetative phase: root production

Cultivation is highly technical and consists of 2 phases:

  • An initial vegetative phase in the field to acquire, at the end of the cycle, a homogeneous root with an optimal stage of maturity,
  • A second phase, in the forcing room, will enable the roots from the field to produce a chicon.
